02 Mar Chocolate Chip Wafer Cookies

Ingredients
- 1/2 c Unsalted Butter, melted
- 1/2 c Maple Syrup
- 4 tbsp. Pecan Meal (or other nut meal)
- 1 c Gluten Free Flour Blend (I used Coconut Mama)
- 1 Egg
- 2 oz Chopped Chocolate or Chocolate chips
Instructions
- Preheat oven to 350 degrees F
- Melt the stick of butter in the microwave
- Add the maple and the egg and whisk until combined
- Add the rest of the ingredients and mix well
- Line a cookie sheet with parchment paper and scoop small amounts of dough onto pan, giving each cookie quite a bit of space. I like to use a small ice cream scoop for this. Leave plenty of room for the cookies to spread, because they will spread a lot!
- Bake for 8-10mins, let cool on rack and enjoy!
