Chocolate Chip Wafer Cookies

These cookies are super simple to make. I love them because they basically require one microwave safe bowl to make them. Simply combine it all with no hassle, scoop them onto a cookie sheet and let them bake! The one thing to know about this recipe is that the cookies will spread a lot when they bake, so leave them plenty of room, and you may need to do them in batches. That being said, I don’t think anyone has ever not eaten a delicious cookie because it amalgamated into the one next to it. Still good!

Chocolate Chip Wafer Cookies

Ingredients

  • 1/2 c Unsalted Butter, melted
  • 1/2 c Maple Syrup
  • 4 tbsp. Pecan Meal (or other nut meal)
  • 1 c Gluten Free Flour Blend (I used Coconut Mama)
  • 1 Egg
  • 2 oz Chopped Chocolate or Chocolate chips

Instructions

  1. Preheat oven to 350 degrees F
  2. Melt the stick of butter in the microwave
  3. Add the maple and the egg and whisk until combined
  4. Add the rest of the ingredients and mix well
  5. Line a cookie sheet with parchment paper and scoop small amounts of dough onto pan, giving each cookie quite a bit of space. I like to use a small ice cream scoop for this. Leave plenty of room for the cookies to spread, because they will spread a lot!
  6. Bake for 8-10mins, let cool on rack and enjoy!
