Free-ish Margaritas (They still have Tequila!)

Free-ish Margaritas (They still have Tequila!)

I love Margaritas. Really there isn’t much more to it than that. Margs and tacos and all is well with the world. When moving to Austin, I even found motivation in how prolific they would be here. The fresh fruit juice version I have made here is strong (be warned!) and full of fresh juices. Is there anything worse than the oddly bitter/sour flavor of the mass produced and bottled sweet and sour stuff? I would simply rather not drink one than have it. The reason for that not only being the flavor, but the fact that Tequila on it’s own (in moderation) doesn’t set off my inflammatory response, but the sweet and sour weirdness definitely does!

Check out this version of a margarita in all of its limey, sweet yet sour glory. For bonus points sip it with your favorite taco variation (some of those coming to the blog soon!).

Be sure to use fresh squeezed juice whenever you are able, it will make all the difference in the flavor of this drink. Also, since these are pretty strong, always keep ice cubes and soda water available to mix in and dilute to your taste. Might as well make these stretch a bit further! Also, to adjust flavor, add more apple juice for sweetness or more lime juice for tartness. Be lively my friends, and share this one with your favorite drinking buddy!

For the salt on the rim trick: grab two plates that are at least as large as the rim of your glass. Fill one with a bit of water and the other with some salt. Turn your glass upside-down (you have to do this before you fill them..) and dip into the water, and then into the salt until you’ve covered the rim to your liking. Flaky sea salt is my favorite. Other fine sea salts work well too!
