17 Jan Lemon Pomegranate Fizz
I am a fan of simple pleasures. While I am the first to admit I tend to overcomplicate things, I recognize that I am often happiest when life is simple. That means simple recipes, simple food, simple plans. We have enough to deal with without also requiring more than is necessary, right?
The secret is that simple doesn’t mean worse. Oh no! Far from it! Often the best things in life are the simple and well crafted with the best life has to offer.
That is what I love about this recipe my sister-in-law made over the holidays. It isn’t complicated; it is just beautiful ingredients and wonderful flavor. There are only three ingredients, but the experience of drinking it is a special one. The tart bubbles lay the perfect base for the pomegranates to pop.
This is the perfect mocktail to kick off a gathering, it is beautiful and simple to prepare.
One trick you should know is how to get the pomegranates out of the rind without having to painstakingly peel through all the inner layers by hand. When I learned this trick it opened up a whole new world of fresh pomegranate because it wasn’t such a time commitment to prep them! Here’s the method:
- Cut the pomegranate in half through the equator
- Hold half of the pomegranate in your hand, seeds down over a large bowl
- Hit the rind of the pomegranate with a wooden spoon (don’t be shy!) until the seeds start to fall out
- Work your way all around the rind firmly hitting the rind on every part until you have the seeds out!
Lemon Pomegranate Fizz
Ingredients
- 2 tbsp Pomegranate seeds (see headnote for prep tip)
- 2 tsp Fresh lemon juice (or to taste)
- 1 1/2 c Sparkling Water (like Topo Chico)
- Fresh lemon slices (for garnish) optional
Instructions
- Combine all ingredients into a glass and serve immediately!
