These have been my favorite go-to snack lately. They are packed with flavor, energy and nutrients. I love that they have carrots in them, which add some fresh flavor and some subtle earthy-ness. They are only made with whole food, raw ingredients and are super simple to make! I have been making these all the time and my daughter has approved, giving me the go-ahead to “keep making those, mom.” These bars are too easy and simple not to make, so go make yourself a batch and let me know what you think!
No-Bake Carrot Cake Bars
All the flavor without the fuss. These no-bake carrot cake bars are a quick and healthy fix for your craving.
Equipment
- food processor
Ingredients
- 2 Carrots large
- 1 1/2 C Pecans
- 8 Dates pitted
- 1/2 C Apricots unsulphured
- 1 tsp Ground Cinnamon
- 1/2 C Coconut Butter
- 1 TB Coconut Oil
Instructions
- Add carrots to food processor and pulse into small bits. Add Nuts and pulse until uniform with carrots. Add in cinnamon, apricots and dates and pulse until all in small, uniform bits.
- Remove from food processor and press into an 8×8 pan lined with parchment paper.
- Heat coconut butter and coconut oil in a small saucepan on meidum-low heat until mostly melted. Turn off the heat and swirl liquid in pan to melt the rest. You are trying to keep it from getting too hot and too liquidy.
- Once coconut butter is melted, pour it over the carrot-date mixture and tilt the pan to evenly coat the top of the pressed bars. Place in the fridge for 2 hours to set then cut into small bars.
