1/2cDairy Free milk replacement (I used flax milk)
1egg
1tsp.Baking Powder
1tsp.Cinnamon
1/2tsp.salt
Maple Sugar (powdered*) for dusting (optional)
1 1/2cOil, high heat tolerant for frying
Instructions
Melt butter or oil in a microwave safe mixing bowl, and then mix in the rest of the ingredients (other than the powdered maple sugar and the frying oil).
Heat oil in a cast iron skillet until hot. Add small spoonfuls of the batter to the oil and fry for a minute or so on each side, or until golden brown (careful, hot oil!)
Remove from oil and set on a paper towel to strain. Allow to cool.
If using, pulse maple sugar in a coffee grinder and dust over fritters before serving.
