Apple Fritters

Ingredients

  • 2 tbsp. butter or coconut oil, melted
  • 1 1/2 c Apple, finely chopped
  • 1 1/2 c Gluten free flour mix
  • 1/2 c Coconut Sugar
  • 1/2 c Dairy Free milk replacement (I used flax milk)
  • 1 egg
  • 1 tsp. Baking Powder
  • 1 tsp. Cinnamon
  • 1/2 tsp. salt
  • Maple Sugar (powdered*) for dusting (optional)
  • 1 1/2 c Oil, high heat tolerant for frying

Instructions

  1. Melt butter or oil in a microwave safe mixing bowl, and then mix in the rest of the ingredients (other than the powdered maple sugar and the frying oil).
  2. Heat oil in a cast iron skillet until hot. Add small spoonfuls of the batter to the oil and fry for a minute or so on each side, or until golden brown (careful, hot oil!)
  3. Remove from oil and set on a paper towel to strain. Allow to cool.
  4. If using, pulse maple sugar in a coffee grinder and dust over fritters before serving.
