Berry Delicious Muffins

Ingredients

  • 1 c maple or agave or a mixture of both
  • 1 1/2 tsp. baking powder
  • 1 tsp. xanthan gum
  • 1/2 tsp. salt
  • 1/2 c dairy free milk, such as rice milk
  • 8 tbsp. butter, room temperature
  • 1/4 c tapioca flour
  • 1/2 c rice flour
  • 1/2 c buckwheat flour
  • 1/2 c sorghum flour
  • 1 flax egg (1tbsp ground flax + 3tbsp water, soaked for 10mins)
  • 1 1/2 c frozen blueberries and raspberries

Instructions

  1. Preheat oven to 350 degrees
  2. Cream butter and sweetener together, pouring in the maple or agave slowly
  3. Add milk and flax egg to butter mixture and combine
  4. Combine all of the dry ingredients into a bowl and mix
  5. Add dry mixture to the wet and fold together, make sure it is well combined, but do not over mix
  6. Fold in frozen berries
  7. Bake for 28-30mins or until muffins are golden and spring back when touched. Allow to cool and eat!
