19 Jan Berry Delicious Muffins

Ingredients
- 1 c maple or agave or a mixture of both
- 1 1/2 tsp. baking powder
- 1 tsp. xanthan gum
- 1/2 tsp. salt
- 1/2 c dairy free milk, such as rice milk
- 8 tbsp. butter, room temperature
- 1/4 c tapioca flour
- 1/2 c rice flour
- 1/2 c buckwheat flour
- 1/2 c sorghum flour
- 1 flax egg (1tbsp ground flax + 3tbsp water, soaked for 10mins)
- 1 1/2 c frozen blueberries and raspberries
Instructions
- Preheat oven to 350 degrees
- Cream butter and sweetener together, pouring in the maple or agave slowly
- Add milk and flax egg to butter mixture and combine
- Combine all of the dry ingredients into a bowl and mix
- Add dry mixture to the wet and fold together, make sure it is well combined, but do not over mix
- Fold in frozen berries
- Bake for 28-30mins or until muffins are golden and spring back when touched. Allow to cool and eat!
