Braised Pork Tacos with Slaw

Ingredients

For the slaw:

  • 1 c Brussel sprouts, thinly sliced
  • 1 Sweet pepper, diced
  • 1/4 Onion, thinly sliced
  • 2 Carrots, grated
  • 5 Radishes, thinly sliced
  • salt and pepper, to taste
  • 1/4 c Olive oil
  • 1/4 c Apple cider vinegar or lime juice

Other components:

  • GF Tortillas, store-bought or homemade (See headnote for suggestion)
  • 1 lb Pulled pork (See headnote for link)

Instructions

  1. Cut veggies and put them in a bowl. Add oil and vinegar and toss to evenly coat the veggies. Slaw can be made a day ahead and stored in the fridge.

For Assembly:

  1. Layout tortillas and add your desired amount of meat and slaw. Serve and eat immediately.
