02 Feb Braised Pork Tacos with Slaw

Ingredients
For the slaw:
- 1 c Brussel sprouts, thinly sliced
- 1 Sweet pepper, diced
- 1/4 Onion, thinly sliced
- 2 Carrots, grated
- 5 Radishes, thinly sliced
- salt and pepper, to taste
- 1/4 c Olive oil
- 1/4 c Apple cider vinegar or lime juice
Other components:
- GF Tortillas, store-bought or homemade (See headnote for suggestion)
- 1 lb Pulled pork (See headnote for link)
Instructions
- Cut veggies and put them in a bowl. Add oil and vinegar and toss to evenly coat the veggies. Slaw can be made a day ahead and stored in the fridge.
For Assembly:
- Layout tortillas and add your desired amount of meat and slaw. Serve and eat immediately.
