Ingredients
For the cake:
- 8 fl oz Dates, pitted
- 1 c Boiling water
- 1/2 c Coconut sugar
- 1/2 c Butter, melted
- 4 Flax eggs (4Tbsp flax meal + 12Tbsp water, rested for 10mins)
- 1 3/4 c GF flour mix
- 2 1/2 tbsp. Instant coffee grounds
- 1 tsp. Baking soda
For the sauce and garnish:
- 1 can of Coconut milk, full fat
- 1/4 c Maple syrup
- Walnuts, chopped and toasted
Instructions
For the cake:
- Combine dates and boiling water in a heat proof bowl and allow to rest for at least an hour.
- Preheat oven to 350 degrees
- Make flax eggs by mixing together flax meal and water and allowing to rest for 10 minutes.
- Dump soaked dates with water into a food processor and pulse until well blended and resembling a paste. Add the remaining cake ingredients and pulse until well combined.
- Line a 9" springform pan with parchment paper, and grease the sides.
- Add cake batter to the springform pan and place in preheated oven, bake for 50 mins or until cake springs back when touched.
For the sauce:
- Combine canned coconut and maple syrup in a sauce pan. Bring to a simmer and allow to cook down by half. Watch and stir the mixture while it is cooking down to avoid burning or boiling over.
- Allow cake to cool for 10 minutes before removing the springform outer liner. Slice cake and pour sauce over the top. Garnish with toasted walnuts if desired.
