Place macadamia nuts, oregano, garlic, paprika and salt into a food processor and pulse until nuts are a finely ground. Remove mixture from food processor and place in a prep bowl.
After prepping the onions and zucchini, prepare a 8x8 baking dish by spreading a tablespoon of olive oil in the bottom and begin layering components, starting with enough zucchini to cover the bottom, then a layer of onion and then about 2 tablespoons of the macadamia nut mixture. Continue making layers in that order until all ingredients are used up.
Finish by drizzling the top with olive oil and sprinkling with salt and pepper.
Bake for 45mins, until top is golden, veggies are soft and sides are bubbly. Remove from oven and allow to cool a bit before serving.
