Zucchini and Onion Bake

Delicious layers of zucchini, onion and a ground macadamia nut mixture

Ingredients
  

  • 2 Zucchini cut in half lengthwise and then sliced
  • 1 Onion cut into half moons
  • 1 C Macadamia Nuts
  • 1 tsp Dried Oregano
  • 1 tsp Garlic, granulated
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tbsp Olive Oil plus more to drizzle
  • Salt and Pepper

Instructions
 

  • Place macadamia nuts, oregano, garlic, paprika and salt into a food processor and pulse until nuts are a finely ground. Remove mixture from food processor and place in a prep bowl.
  • After prepping the onions and zucchini, prepare a 8x8 baking dish by spreading a tablespoon of olive oil in the bottom and begin layering components, starting with enough zucchini to cover the bottom, then a layer of onion and then about 2 tablespoons of the macadamia nut mixture. Continue making layers in that order until all ingredients are used up.
  • Finish by drizzling the top with olive oil and sprinkling with salt and pepper.
  • Bake for 45mins, until top is golden, veggies are soft and sides are bubbly. Remove from oven and allow to cool a bit before serving.
