No-Bake Carrot Cake Bars

Ingredients
  

  • 2 Carrots large
  • 1 1/2 C Pecans
  • 8 Dates pitted
  • 1/2 C Apricots unsulphured
  • 1 tsp Ground Cinnamon
  • 1/2 C Coconut Butter
  • 1 TB Coconut Oil

Instructions
 

  • Add carrots to food processor and pulse into small bits. Add Nuts and pulse until uniform with carrots. Add in cinnamon, apricots and dates and pulseĀ until all in small, uniform bits.
  • Remove from food processor and press into an 8x8 pan lined with parchment paper.
  • Heat coconut butter and coconut oil in a small saucepan on meidum-low heat until mostly melted. Turn off the heat and swirl liquid in pan to melt the rest. You are trying to keep it from getting too hot and too liquidy.
  • Once coconut butter is melted, pour it over the carrot-date mixture and tilt the pan to evenly coat the top of the pressed bars. Place in the fridge for 2 hours to set then cut into small bars.
