Brownie Bites

I am always on the lookout for a quick and easy brownie recipe. I like them to taste like the chewy, fudgy brownies I remember eating as a kid. I remember getting boxes of brownie mixes as a kid, adding eggs and water and throwing it in the oven. The results were factory perfect, but alas those days are no longer, and my taste buds have moved on to homemade and real. I am happy to report that this recipe I share is delicious and much better for you that the boxed versions.

I like this recipe for its simplicity and plant based ingredients. It is vegan and you can just mix this one up all in the same bowl. The zucchini and applesauce make you feel less guilty about making brownies, and keep the brownies moist and chewy.

I use a 24-hole mini muffin pan to make these into “bites.” Scoop the batter in with a mini cookie scoop, it makes the job a lot quicker. These are the perfect thing for a quick craving fix! Enjoy!

Brownie Bites

Ingredients

  • 1/2 c Olive oil
  • 1/2 c Maple syrup
  • 2 Flax eggs (2TB flax meal plus 6TB water, let sit for 10mins)
  • 1/2 c Zucchini, shredded
  • 2 tbsp. Applesauce
  • 1 tsp. Vanilla
  • 3/4 tsp. baking powder
  • 1/4 tsp. sea salt
  • 1/2 c Cocoa Powder
  • 3/4 c GF flour mix

Instructions

  1. Preheat oven to 350 degrees F
  2. Combine all ingredients in a bowl and stir until well combined. Let rest for a few minutes to let it come together better.
  3. Scoop about tablespoon-sized scoops of batter into the mini muffin pan. Put in the oven and bake for roughly 25 minutes. Remove from oven and allow to cool for 10 minutes before removing from the pan. Enjoy!
