Easy Vegan Chia Pudding

Ingredients

  • 1 c Raw Cashews, soaked for at least 6 hours
  • 2 c Water
  • 1 Banana (fresh or frozen)
  • 1 tsp. Vanilla
  • 2 tbsp. Chia seeds

Instructions

  1. Soak cashews in the fridge for at least 6 hours. Strain cashews and combine soaked cashews with everything but the chia seeds in a high speed blender. Blend until very smooth.
  2. Pour cashew liquid into a container that has a lid. Add the chia seeds and give the mixture a stir. Seal with the lid and give it a good shake. Place in the fridge and let the chia seeds soak for at least two hours. Shake occasionally during this period if you can. Shake or stir before serving.
