Peach Oven Pancakes

Ingredients

  • 3/4 c GF flour blend
  • 4 eggs
  • Shake of salt
  • 1 c dairy free milk
  • 4 tbsp. butter (or coconut oil)
  • 4 c Fruit
  • Maple syrup to taste

Optional

  • 1 tsp. Vanilla
  • Cinnamon

Instructions

  1. Preheat oven to 400 degrees F.
  2. Put flour in a bowl and shake with salt. Make a well and add eggs. Stir to combine well, then add milk. Add vanilla and stir if using.
  3. Melt butter in an oven safe pan over medium high heat. Add fruit and cook until defrosted (if frozen) or starting to cook down (if fresh).
  4. Add maple to the fruit to taste, spread it around with your spatula and then pour batter over the fruit.
  5. Cook in 400 degree oven for 23-25mins, or until golden and puffy. Enjoy!
