Heat a large skillet and add the oil. Once the oil is hot, add mushrooms, carrot, green onions, cabbage and basil and sauté until cabbage is soft.
Add cashews, lime juice, aminos, ginger, garlic, salt and pepper to the pan and sauté to combine. Allow to cook together and soften the cashews slightly, about 5 minutes.
Prepare lettuce by removing whole leafs from the center and rinsing and drying them.
To eat, place two or three spoonfuls of the cabbage into the lettuce leaf and eat like a taco.
