Cashew Lettuce Wraps (Vegan)

Lately when I drop my kiddos off at their preschool, their garden has been filled with beautifully lush and brightly colored lettuces. The experience of seeing and appreciating the lettuce is only topped by knowing that my children get to attend school where they have a garden and experience the planting, growing and eating of these delicious plants. Inspired by these lettuces, I wanted to create a recipe to feature them. The wraps I created here are plant forward and vegan to honor the lettuce that holds them. They are also paleo and whole 30! These wraps are a delicious way to eat your veggies today!

Cashew Lettuce Wraps (Vegan)

Salty, herbaceous mix of veggies wrapped in lettuce! 

Ingredients
  

  • 2 TB Avocado Oil for pan
  • 8 oz Mushrooms sliced
  • 1 Large Carrot shredded
  • 6 Green Onions Chopped, use both white and green parts
  • 2 C Raw Cashews rough chopped
  • 1/2 Head of Cabbage (about 4 cups) Sliced
  • 1/2 C Basil Chopped
  • 2 TB Lime Juice
  • 1/2 C Coconut Aminos
  • 1 tsp Ground Ginger
  • 1 tsp Ground Garlic
  • Salt and Pepper to taste
  • 1 head Large leaf lettuce Such as butter or romaine lettuce

Instructions
 

  • Heat a large skillet and add the oil. Once the oil is hot, add mushrooms, carrot, green onions, cabbage and basil and sauté until cabbage is soft.
  • Add cashews, lime juice, aminos, ginger, garlic, salt and pepper to the pan and sauté to combine. Allow to cook together and soften the cashews slightly, about 5 minutes.
  • Prepare lettuce by removing whole leafs from the center and rinsing and drying them. 
  • To eat, place two or three spoonfuls of the cabbage into the lettuce leaf and eat like a taco.
