I love zucchini and onion together. When I lived in Germany for a summer in college, I used to pan fry it most nights to put on top of pasta with a store bought Alfredo. I no longer tolerate traditional pasta or traditional Alfredo well, but I still love zucchini and onions with cheese, and this recipe can hit all of those notes for me. This recipe only has olive oil, spices and macadamia nuts with the zucchini and onions, but when everything is layered together in this way baked, everything becomes much more than the sum of its parts. Make this as a side dish with meat or fish, or as a vegan main dish with a side salad.
Zucchini and Onion Bake
Delicious layers of zucchini, onion and a ground macadamia nut mixture
Ingredients
- 2 Zucchini cut in half lengthwise and then sliced
- 1 Onion cut into half moons
- 1 C Macadamia Nuts
- 1 tsp Dried Oregano
- 1 tsp Garlic, granulated
- 1 tsp Paprika
- 1 tsp Salt
- 1 tbsp Olive Oil plus more to drizzle
- Salt and Pepper
Instructions
- Place macadamia nuts, oregano, garlic, paprika and salt into a food processor and pulse until nuts are a finely ground. Remove mixture from food processor and place in a prep bowl.
- After prepping the onions and zucchini, prepare a 8×8 baking dish by spreading a tablespoon of olive oil in the bottom and begin layering components, starting with enough zucchini to cover the bottom, then a layer of onion and then about 2 tablespoons of the macadamia nut mixture. Continue making layers in that order until all ingredients are used up.
- Finish by drizzling the top with olive oil and sprinkling with salt and pepper.
- Bake for 45mins, until top is golden, veggies are soft and sides are bubbly. Remove from oven and allow to cool a bit before serving.
