The base of these rolls are good old sweet potato. Not flour, but the real thing – baked first and then blended with the other wet ingredients before being stirred into dough. I have found sweet potato to be charming to bake with. It is a whole food that adds a nice springy texture to baked goods. These rolls are the product of trying to make a bread with whole, gluten free ingredients – they are super yummy next to soup with some butter on top! Yum.
Sweet Potato Dinner Rolls
Hearty rolls with clean ingredients
Ingredients
- 2 cups Sweet Potato cooked until soft, then cooled
- 1/4 cup Applesauce unsweetened
- 1/4 cup Tahini
- 1/2 cup Cassava Flour
- 1/2 cup Potato Starch
- 1/2 cup Flaxmeal
- 2 tsp Baking soda
- 1/4 cup Sunflower and hemp seeds
Instructions
- Combine sweet potato, applesauce and tahini in a high speed blender and blend until smooth
- Mix dry ingredients together, stir and add then stir them to the wet mixture
- Once the dough is combined, work the dough into about 9 balls and place them touching on a pan lined with a baking sheet. Sprinkle with sunflower and hemp seeds.
- Bake at 350˚F for 35-40mins, until the rolls spring back when touched. Allow to cool before eating.
